Vitamin E is a strong antioxidant that protects cell membranes and other fat-soluble parts of the body from damage. Vitamin E has also been shown to play a role in immune function, DNA repair, and other metabolic processes. It may be effective in protecting against air pollution, ultraviolet radiation, and sunburns. Vitamin E exists in butter, margarine, vegetable oils, nuts, green leafy vegetables, and fortified cereals. Vitamin E deficiency is rare, and may occur in people who are malnourished or on very low-fat diets.
